Some energy balls can be so sweet with all the dried fruit packed into them but these ones are 👌🏻 With more 'real fruit' and oats than anything else they taste much lighter than your average energy ball. And despite the fact they look like stuffing balls 😕 they're pretty tasty as demonstrated by the toddler here! They'd also be good flattened into cookies and baked instead of refrigerated.

Here's how we made ours:
70g cashew nuts
40g peanut butter 🔸Blitz the apple in the food processor first and add a dash of hot water to make a rough purée 🔸Then add the rest of the ingredients and blitz again
🔸Roll into small balls and refrigerate
